Pork and Pineapple Kebabs

Spring is finally upon us in Northern Michigan. And boy oh boy is it awesome. We’re in that beautiful stage where plants are sprouting up out of the ground, leaves are popping on trees, and the bugs have yet to ruin it all.

It’s finally (just) warm enough for us to get our boat out on the water. And the most exciting part….we bought a special grill just for the boat! I’ve been scouring the internet for recipes for good boat meals that will travel well and only need the use of the grill. This one fits the bill (minus the rice maybe, but the kebabs alone would work nicely). Whether you have a boat, and a grill on your boat, or not, this is a delicious meal. Recipe after the jump.

Crock Pot Curry

Happy Spring! It’s finally April, and up here, the snow is finally (s-l-o-w-l-y) melting. So, Spring is on its way, but we’ve still had our share of days in the 30′s. This dish, from Real Simple, is a perfect weeknight meal to bridge the gap to warmer weather. Throw it all in the crock pot and you’re set! We’ve made this dish a couple of times recently and it does not disappoint.

Curried lentils with chicken and potatoes

Yield: Serves 6.

Curried lentils with chicken and potatoes

Ingredients

  • 1 1/2 cups red lentils or yellow split peas
  • 1 1/2 pounds russet potatoes (about 2), peeled and cut into 1-inch pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 2 teaspoons curry powder
  • 1 teaspoon chopped fresh ginger
  • kosher salt and black pepper
  • 4 cups low-sodium chicken broth
  • 6 boneless, skinless chicken thighs (about 1 3/4 pounds total)
  • 2 tablespoons fresh lime juice, plus lime wedges for serving
  • 3/4 cup plain yogurt
  • 1/4 cup fresh cilantro leaves, torn
  • naan bread, toasted, for serving (we just used pita bread)

Instructions

  1. In a 4- to 6-quart slow cooker, combine the lentils, potatoes, onion, garlic, curry powder, ginger, 1¼ teaspoons salt, and ¼ teaspoon pepper. Add the broth and chicken and turn to coat.
  2. Cover and cook until the lentils and vegetables are tender and the chicken is cooked through, on low for 7 to 8 hours or on high for 4 to 6 hours (this will shorten total recipe time).
  3. Fifteen minutes before serving, transfer the chicken to a medium bowl and, using 2 forks, shred the meat; return it to the slow cooker. Add the lime juice and stir to combine, adding more water if necessary to reach the desired consistency. Serve topped with the yogurt and cilantro, with the naan and lime wedges on the side.

Maple Chicken & Waffles (Iron Chef Battle Maple Syrup)

Fall has officially arrived. And with it, comes blustery winds, darker days, and leaves. Lots of leaves. When I was younger, Fall meant back to school and an earlier bed time. I was one of those strange kids who loved going back to school, but now that I’m grown-up (sort of!), I can appreciate Fall even further. It is by far my most favorite season. I obviously love the beautiful colors of the leaves changing, and I love the smells. And the food. Comfort. Food.

Around here, September (and sometimes October, if we’re lucky) brings about a final burst of summer, minus the “fudgies” (Northern Michigan’s lovingly-appointed name for the tourists). Shopkeepers get a chance to slow down, local business owners finally get out on the lake, and the locals finally get a chance to get together and see each other again.

The Quiche of All Quiches

Michael and I recently moved to our very first home! No more shared walls or un-attached garages, but we also no longer have free maintenance services to call anytime anything goes awry. Our lives will now revolve around projects, projects, and more projects. But, we are happy, and we love the view and ever-changing landscape of the lake, the trees, and the seasons.

We had a few friends over for a house-warming party a couple weeks ago. It was pretty low-key, with people in and out throughout the morning and afternoon, so I made a couple quiches and my mom was kind enough to whip up a batch of her decadent cinnamon rolls.

Delicious one-pot chicken

There’s no telling what made my water break. Maybe it was the move from Chicago to Northern Michigan. Maybe it was the speed-driven nesting activity I did once we arrived. Maybe it was the couple of hikes we took through the woods behind our apartment. Or, maybe it was the last meal I made the night before. And Baby Makes Three

In mid-August, we committed to move from Chicago to Northern Michigan so that Michael could start a new job on October 1. During the month of September, we told our employers in Chicago of our upcoming move, re-arranged our health insurance, rented out our Chicago condo, found an apartment rental in Michigan, hired a moving company, packed up our things, visited our favorite Chicago restaurants, said goodbye to friends….all while preparing for our upcoming due date for our baby….October 22.
