Grown-Up Beenie Weenies

Blame it on the pregnancy, and the darn CPA exam, AGAIN. Don’t worry, I’m not starving folks. I’m just not cooking, or blogging, right now, for that matter. What have I been eating? Well, Michael’s cooking, of course, and he’s getting good (more on that in subsequent posts). But on the nights when we have no groceries, and Michael is running out of all-star husband-of-the-year juice, we gotta find something to eat.

My sister-in-law mentioned beenie weenies a few weeks back. “What’s ‘beenie weenies’?” I asked. She guffawed at the simple fact that I wasn’t familiar with the term. “Franks and beans!” Michael stepped in to help me out, “Kenna, a can of baked beans with hot dogs cut up in it.” Ohhhhhhh. Sorry, never had that one growing up.

Well, it’s high time I tried. Pregnant, busy studying, no time to cook? Make this. Easy. Peasy.

Real Deal Beenie Weenies
1/2 pound bacon
1 onion, roughly chopped
2 T. cider vinegar
1/2 cup ketchup
1 c. brown sugar
1 can pork n. beans, drained
1 can butter beans, drained
1 can red kidney beans, drained
4 all-beef hot dogs (we used Hebrew National), cut up into bite-size pieces

In a large saucepan, brown onion and bacon together. Add vinegar, ketchup and brown sugar and let the sauce simmer a bit. Add the beans and hot dogs and heat through. If you like, you could throw this in a casserole and bake it for a while, but when you’re pregnant and hungry, why wait!?
