Stockpiling Food

Michael has been busy studying. And I’ve been busy traveling. Which means that while I’m off eating like a queen, Michael’s stuck at home….eating take-out. Poor Michael. After a long Memorial Day weekend with CFA books up to his ears and without a home-cooked meal, I decided to put together some grub for him for the upcoming weekend since I’ll be gone again (girl’s trip!!!).

The kitchen is stocked with the following:

Cowboy Lasagna – The Pioneer Woman

Direct quote from Michael: “The best lasagna you’ve ever made.”
Baguettes and Focaccia (fresh from culinary school, stocked in the freezer)
Jacque Torres Chocolate Chip Cookies – Martha Stewart

 

Sliced turkey, avocado, and tomatoes for sandwichesPeanut Noodle Salad – Cook’s Country June/July 2010

Serves 6-8
1 pound spaghetti or linguini
1 T salt
3 T toasted sesame oil
3/4 c. chunky peanut butter
6 T soy sauce
3 T white vinegar (I used brown rice vinegar)
1 T grated fresh ginger

1 T hot sauce (I used Frank’s)
1 cucumber, peeled, seeded, and sliced into matchsticks
1 red bell pepper, seeded and cut into strips
1/3 c. chopped fresh cilantro

1. Cook pasta. Run under cold water to stop cooking. Toss with sesame oil.
2. Whisk peanut butter, soy sauce, vinegar, ginger, hot sauce, and 6 T pasta cooking water in medium bowl until smooth.
3. Toss pasta with sauce, cucumber, bell pepper and cilantro.

We added a 1/2 pound P&D sauteed shrimp for a little protein.

Salad is best served at room temperature, but also would be good straight from fridge or heated in microwave.

Aren’t I the best wife ever? It’s the least I could do to help Michael prepare for his big test. Good luck, Michael! At least you won’t go hungry.

    Thanks to you, I tried the peanut noodle salad out on Curt last night (along with your shrimp addition)….a definite winner!
