Sometimes a fridge-full of food is daunting. Which was the case after our camping trip and a batch of leftovers we gratefully took home from a friend’s rehearsal dinner. Our fridge was full of bratwurst, hot dogs, homemade tzatziki sauce, watermelon, sweet corn and chicken pesto linguini, to name a few.
What did we do?
1) Chicken Pesto Linguini Frittata
I put about a cup of the leftover pasta in a hot oven-proof skillet.
Once the pasta was heated through, I poured in some eggs I had whipped with a bit of salt and pepper. After I stirred over the stove for about a minute and topped it with some crumbled feta cheese, I placed it in a 400-degree oven for about 20 minutes. Voila! A new twist on leftover linguini.
2) Bratwurst Gyros
No photo of this one, so just imagine if you will: I chopped up the leftover brats and re-heated them in the microwave. I grilled some pita bread in some oil in a pan, then stuffed the pitas with cucumber, the brats and topped with tzatziki sauce. Instantly, a totally new twist on bratwurst.





Hmmm, that chicken pesto linguini looks familiar!!
And yes – I found your blog!! Not going to lie, it took some pretty intense Googling, but I was up to the challenge. And now it's in my favorites and has been officially added to my "bored at work, need to procrastinate" website list!
